Super Oatmeal Bowl

Ingredients:

  • 1/2 cup of rolled oats

  • 1 cup milk of choice

  • 1 banana

  • optional 1/4 tsp cinnamon

  • optional crushed walnuts, shredded coconut, etc.

  • blueberries, blackberries, or berry of choice

  • 1/2 fuji apple or any sweet crunch apple of choice

Directions:

Combine all ingredients in a small pot except for banana and berries (add right before eating). Bring to a boil over medium heat. Once boiling, stir only occasionally to prevent sticking or boiling over. It will eventually thicken. Sweeten as desired. Add your favorite toppings. I like peanut butter. Serve hot, or refrigerate overnight and serve either hot or cold the next day.

Breakfast Plate

Ingredients:

  • 3/4 cup of egg whites

  • 1 cup chopped cherry tomatoes

  • 2 cups spinach

  • cracked black pepper

  • olive oil

  • fresh garlic

Directions:

Pour 3/4 egg whites into a hot pan with a dash of olive oil, sprinkle sea salt, heat until semi firm, remove promptly and garnish with black cracked pepper.

Then sauté some garlic in olive oil in a large wide pan, and add the cleaned, drained and dried spinach leaves to the pan. Pack the pan with spinach, cover and cook for only a minute or two tops. Chop cherry tomatoes in halves, sprinkle with sea salt and cracked pepper.
